Ingredients:

4 cups bread flour (you can also use high-protein flour)

1 tablespoon granulated sugar

1½ teaspoons salt

1 tablespoon vegetable oil

1¼ cups lukewarm water

2 teaspoons active dry yeast

Cornmeal or semolina flour for dusting

Instructions:

Activate the Yeast:

In a small bowl, combine the lukewarm water, sugar, and yeast. Let it sit for about 5-10 minutes until the mixture becomes frothy.

Mix the Dough:

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and vegetable oil. Stir until a dough forms.

Once the dough comes together, transfer it to a floured surface and knead for about 10 minutes until it becomes smooth and elastic.

First Rise:

Place the dough in a lightly oiled bowl, cover it with a kitchen towel, and let it rise in a warm, draft-free place for about 1 to 1½ hours, or until it doubles in size.

Shape the Bagels:

Once the dough has risen, punch it down and divide it into 8 equal portions. Shape each portion into a ball.

To shape the bagels, poke a hole in the center of each dough ball and gently stretch the dough to form a ring. Make the hole about 1 to 2 inches in diameter.

Second Rise:

Place the shaped bagels on a baking sheet lined with parchment paper or lightly greased. Cover them with a kitchen towel and let them rise for another 20-30 minutes.

Preheat the Oven:

While the bagels are rising, preheat your oven to 425°F (220°C). Bring a large pot of water to a boil, then reduce the heat to a simmer.

Boil the Bagels:

Once the bagels have risen, carefully drop them into the simmering water, a few at a time, making sure they have enough space to float freely. Boil them for about 1-2 minutes on each side.

Bake:

Remove the boiled bagels from the water using a slotted spoon and place them back on the baking sheet. Sprinkle them with cornmeal or semolina flour.

Bake the bagels in the preheated oven for 20-25 minutes, or until they are golden brown and have a shiny crust.

Cool and Enjoy:

Once baked, transfer the bagels to a wire rack to cool completely before slicing and serving. Enjoy your homemade New York-style bagels with your favorite toppings!

Feel free to customize your bagels by adding toppings like sesame seeds, poppy seeds, everything bagel seasoning, or even cheese before baking. Enjoy your freshly baked New York-style bagels!
